I was inspired by Martha Stewart's Spinach Soba Soup. Since I am pregnant and my husband is a meat lover I decided to tweak her recipe a bit. You may find her recipe on episode Monday January 5th from the Body and Soul Challenge on her website www.marthastewart.com
Martha's recipe calls for Japanese Soba noodles, fresh Shiitake mushrooms, fresh spinach, chicken broth, minced Ginger, fresh Scallions, salt for taste, and 3 cups of water.( I hope I am not missing anything.)
I added cubed, browned gingered chicken tenders. My husband needs a little more substance in his food and with a baby on the way for me I was looking for a complete one pot meal. I bought some chicken tenders which I browned in a skillet with powdered Ginger and Garlic. I also added a Tablespoon of low sodium Soy Sauce to the mixture. Then my grocery store was out of fresh Shiitake mushrooms. I found some dried ones instead. A Japanese friend of mine uses dried Shiitakes in most of her recipes. Follow the instructions and soak them for 30 minutes. I used the mushroom broth for the 3 cups of water that Martha calls for in her soup. Our grocery also does not carry Soba Noodles. All I could find was the Ramen. I used two packages without the seasoning packages. For a little crunch I added caned Bamboo Shoots, Water Chestnuts and Bean Sprouts.
This was an easy meal to make and a very healthy one at that.
